  • How can I recognise a TSG-certified restaurant?
Certified restaurants display the official TSG plaque at the entrance — a golden oval with the European seal, the Confraternity logo, the Ponte de Lima coat of arms and the AGRICERT mark. Only certified restaurants may use the protected name «Arroz de Sarrabulho à Moda de Ponte de Lima».
  • What side dishes are served with Arroz de Sarrabulho?
Traditionally, the dish is served with Minho-style rojões (pork chunks), belouras, flour-coated tripe and golden sautéed potatoes seasoned with garlic and parsley. Some restaurants also offer stomach, liver, heart, lungs and fried blood. It is commonly served with bread or corn bread (broa).
  • When is the best time to try Arroz de Sarrabulho?
Traditionally it is prepared mainly in winter, but it is available year-round at the certified restaurants. One of the most emblematic moments to taste it is during the Gastronomic Weekend organised by the Ponte de Lima Municipality and the Confraternity, and at the Feiras Novas festival.
  • How can I apply for TSG certification for a restaurant?
The application process is open to all restaurants in Ponte de Lima that wish to meet the specifications. The audit is conducted by AGRICERT — Certificação de Produtos Alimentares, Lda., the designated certification body. To start the process, contact the Confraternity.
